Halloween Dinner Board

Serve up a bit of Halloween fun with this creepy, charcuterie-style dinner board. With plenty of choices and flavors, it’s a fun treat for kids and adults alike.

This one features meats (sopressata and pepperoni), cheeses (creamy havarti and pepper cheddar), olive-and-mozzarella eyeballs, bloody beet pakoras (recipe below) and cilantro herb chutney (recipe below).

Make it your own by adding your favorite chopped veggies and fruits, finger foods like sausage balls or ham-and-cheese rollups, and crackers or breads. Sauces like tzatziki and pepper jellies are also great charcuterie elements.

Bloody Beet Pakoras

  • Beets (1 large or 2 small), peeled and shredded

  • 1 cup purple cabbage, shredded

  • ½ a red onion, thinly sliced

  • ½ cup chickpea flour

  • 1 teaspoon turmeric

  • ½ teaspoon cumin

  • Salt and pepper, to taste

  • Vegetable oil for frying

Mix all ingredients together in a large bowl, and set aside. Heat about 1½ inches of vegetable oil in a pan over medium-high heat. Form beet mixture into small patties and drop into the oil, a few at a time. Stay nearby and fry until starting to brown, about 5-7 minutes being careful to not let them burn. If it seems the oil is getting too hot, turn heat down to medium. When done, remove from the pan and place on a plate lined with paper towels.

Cilantro and Herb Chutney

  • 2 cups fresh cilantro

  • Handful fresh mint

  • Handful fresh rosemary

  • Handful fresh dill

  • 2 garlic cloves

  • 2 teaspoons lemon juice

  • ½ cup olive oil

Blend all ingredients in a food processor or blender, and serve in a decorative bowl or small, cleaned out pumpkin.
