Jalapeno Cheese Grits

Fancy up traditional grits with this rich and spicy recipe. Serve topped with shrimp that has been sauteed in butter, garlic and lemon juice.

  • 1 tablespoon olive oil

  • 1 fresh jalapeno, diced

3 cloves garlic, minced

  • 1 cup half-n-half

  • 3 cups milk

  • 1 cup uncooked grits

  • ½ stick butter

  • 1 egg, beaten

  • 1 cup sharp white cheddar cheese

  • 1 cup fontina cheese

  • ½ cup Parmesan cheese

  • ½ teaspoon nutmeg

  • Salt, to taste

  • Pepper, to taste

Heat oven to 350°F. In a medium-sized pot, heat olive oil over medium heat. Add the jalapeno and garlic and cook, stirring for about 5 minutes.
Stir in the half-n-half and milk, and turn up the heat. Once boiling, turn down the heat, and stir in grits and butter. Cover, and simmer grits on medium-low heat, stirring occasionally for 5-7 minutes. Mix egg and cheeses into the grits.
Stir in the nutmeg, salt and pepper.
Pour into a greased 9x13 casserole dish or pan. Bake for 20-25 minutes, until golden brown on top.
